The tradition of drinking these drinks comes from the year 1847 when there were no fridges or freezers and much less electricity, thus the drinks could not be dispatched daily and the wine-taster was served directly from the barrel.

The barrels were / are of a capacity between 220 and 225 liters and kept the drink at the right temperature, especially when the yeasts favor the fermentation process in spring (flower veil) being very active and more aromatic.
